I absolutely LOVE Egg Salad Sandwich not only because it’s the Easiest, Simplest, and Quickest Lunch to make, but also because it’s Incredibly Delicious and Nutritious.
Egg Salad Recipe is one of those recipes that you can make in different variations, but I LOVE the simplest form of Egg Salad that I’m sharing the Recipe with you here!
You can literally make this Recipe in 15 minutes, and keep everyone around you, including yourself, happy and satisfied with a perfectly healthy lunch that’s packed with Flavor, Protein and Nutrition.
What I love the most about this Recipe is how Quick it is to make a Tasty and Protein-Packed lunch that’ll keep you full and satisfied for hours.
On busy workdays I just want to have a quick lunch to grab and go, but a sort of a lunch that’ll give me the satisfaction and the joy of eating it, if you know what I mean!
Also, Egg Salad Sandwich is a GREAT dish to add in your meal prep plan. You can store Egg Salad in an airtight container for up to 3 days. Personally, I don’t recommend refrigerating this Salad for more than 3 days.

Ingredients for Egg Salad Sandwich:
Hard Boiled Eggs
I use 8 large hard-boiled eggs for this recipe, 2 eggs per person.
However, If you want to make this recipe healthier, I’d suggest mixing up 4 whole hard-boiled eggs with 4 egg whites only.
Light Mayonnaise
Lighten up the calories in this recipe by using Light Mayonnaise instead of regular Mayonnaise.
You can also substitute Mayonnaise with Non-Fat Greek yogurt.
Dijon Mustard
To add even more flavor to Egg Salad, I highly recommend using Dijon Mustard.
Microgreens
Honestly, I use different Fresh Herbs each time I make Egg Salad.
My Favorite Herbs to use for Egg Salad are Fresh Microgreens, Parsley, Dill, Cilantro or Chives.
The key to make the ultimate Egg Salad is to use Fresh Herbs to enhance the flavor.
Lemon Juice
I LOVE Lemony salads of any kind, so I use juice of 1/2 fresh Lemon for this Recipe.
To make the BEST Egg salad, using Fresh Lemon Juice, is a MUST. Using Store-bought/Bottled lemon juice will ruin the taste of this salad.
Olive Oil
I use only 1 Teaspoon Extra Virgin Olive Oil to boost the flavor in this recipe.
Salt and Pepper
The only seasonings you need are salt and ground black pepper for this Recipe. You can also add garlic powder to your Egg Salad if you like.
Bread
Choose your favorite type of bread or slices of toast.
How to Make Egg Salad Sandwich:
Start by boiling the eggs. If cooking eggs on the stove top, place eggs in a single layer in a medium size Sauce Pan Cover with cold water. Bring to boil.
After 10 minutes once water is boiling remove the eggs from heat and place immediately in a bowl of ice water.
Peel hard boiled eggs and place in a bowl. You can either mash the hard-boiled eggs with a fork or chop them into small pieces. Both ways work perfectly for this recipe.
In the same bowl, add light mayonnaise, Dijon Mustard, Olive Oil, Lemon Juice, Microgreens or other fresh herbs, season with salt and ground black pepper, and mix all the ingredients together until well combined.
Choose your favorite bread, or slices of Toast and Spoon the egg salad onto the bread and enjoy!
You can also Serve egg salad over slices of tomato, Bell Pepper, on salad greens, in a lettuce wrap, or just by itself!
Additional Tips for Egg Salad Sandwich:
- You can make this recipe in different variations. Simply add thinly diced Celeries , red onions or Scallions.
- Diced Avocados also work perfectly with this recipe.
- Use Fresh Herbs for the best results. You can use Fresh Microgreens, Parsley, Dill, Cilantro, or Chives for this Recipe.
- I highly recommend using Light Mayonnaise for a Healthier version of this salad. You can also use Non-Fat Greek Yougort for this recipe.
- Grated or chopped Pickles also taste incredible with this recipe.
- Be creative with the spices you want to use for this recipe. To make this Egg salad more flavorful and a little spicy, use a bit of Curry, Cayan Pepper or Smoked Paprika.
- To keep this Salad Paleo, Keto or Whole30, serve it over fresh greens or salad.
