This Strawberry Arugula Salad Recipe is Vegan, but you can easily make it non-vegan with adding some toppings like Grilled Chicken Breast, Feta Cheese or Goat Cheese with Blueberry/vanilla flavor that is heavenly delicious and elevates the flavor of this amazing salad!

- Baby Spinach – or Fresh Mint, Basil, cilantro, or parsley
- Fresh Strawberries
- Walnuts, pecans, sunflower seed, or sliced almonds

- Extra Virgin Olive Oil
- Balsamic Vinegar
- Sea Salt
- Ground Black Pepper
- Drizzle of Honey (Optional)
- Garlic Powder (Optional)
- Lemon Zest (Optional)
This salad is a vegan version of classic strawberry arugula salad. For a non-vegan strawberry arugula salad, you have a variety of healthy toppings to choose from:
- Feta Cheese
- Goat Cheese (Regular or Blueberry/vanilla flavor)
- Blue Cheese
- Grilled Chicken Breast
- Boiled Egg
How to Make Strawberry Arugula Salad:
I use a very simple salad dressing for my Strawberry Arugula Salad. As you already know store-bought salad dressings are packed with unwanted sugar, calories, and fat.
So, it’s way better to make your own Homemade salad dressing that you trust! Not to mention that you’ll save some money on spending on bunch of fancy looking salad dressing bottles that scream High calories, saturated fat and sugar!
For this Strawberry Arugula Salad, I start by making the salad dressing in a large bowl first, then I add the salad ingredients to combine with the dressing. This way I make sure the dressing is evenly distributed.
However, if you’re going to store this salad for longer than a day, I highly recommend adding the dressing to the salad right before serving. Storing the salad with its dressing will make your salad soggy which is not tasty!
Step 1:
All you need to do for this Homemade Strawberry Arugula Salad Dressing is to whisk together extra virgin olive oil, balsamic vinegar, a pinch of sea salt, and a ground black pepper in a large bowl. You can also add a pinch of garlic powder and a drizzle of honey or more for more flavor.
Step 2:
Next step is to toss the Arugula, spinach or other fresh herb, and sliced strawberries into the bowl and combine with the dressing.
Combined with strawberries and arugula, baby spinach adds more freshness and flavor to your salad.
If you’re not a fan of Spinach, feel free to use any type of Fresh herbs like Fresh basil, mint, cilantro, or parsley for an awesome flavor! Just make sure to use Fresh Herbs instead of dried ones to get the ultimate fresh flavor.
Step 3:
Lastly, add about ½ cup walnuts, pecans, sunflower seed, or sliced almonds to the bowl and toss again lightly.
Step 4:
Adding lemon zest to your salad is completely optional but highly recommended if you love lemony salads as much as I do!
Drizzle some Balsamic glaze over your salad before serving and enjoy!
