I’ve mentioned before in my other posts that, I’m not a fan of plain and boring salads!
I want my salads to be packed with Protein, Fiber, Nutrition, and Flavor. I also, try to make colorful salads that look Appealing and Fun!
The amazing fact about Chickpea Salad is that you can make this salad in so many ways with using different variety of veggies every single time.
There’s no rule! It’s one of those Recipes that you can easily make it your own!
Any vegetable goes perfectly with this salad. But, remember that the key to make the ultimate Chickpea Salad is to use Fresh Ingredients only.
Chickpeas, Refreshing Cucumbers, Cherry Tomatoes, Arugula, Radishes, Scallions, Fresh Parsley and the lemony dressing are the perfect ingredients to make this salad Colorful, Flavorful, and Nutrition-Dense.
Chickpea Salad Recipe Ingredients
Canned chickpeas
Chickpeas are the same as Garbanzo Beans. Make sure to Drain and Rinse the chickpeas to remove liquid and excess salt.
Cucumber
I prefer to use Persian Cucumbers for my Chickpea Salad.
Personally, I’m not a fan of “Watery” cucumbers, and I think Persian Cucumbers taste the best! But this is just a personal preference if you want to use regular garden cucumbers that’s totally fine.
Cherry tomatoes
Roma Tomatoes will work great too, but I love using Cherry Tomatoes for my salad.
Radish
Radishes are packed with Nutrition and flavor and take this Chickpea Salad to another level.
Scallion
I believe using Scallion instead of Red Onion is the key to make the most delicious and flavorful Chickpea Salad! I absolutely love Scallion, if you do too give it a try in your Chickpea Salad.
Arugula
Arugula tastes amazing in just any salad! Why not add some Arugula to your chickpea salad to add on even more greens and flavor!
Parsley
Personally, I don’t like to use dry parsley for this salad. Fresh Parsley is the key to have a tasty and fresh Chickpea Salad. You can also use Basil, Mint or Cilantro for this salad.
Sesame Seeds
This is optional, but totally recommended to make the ultimate Chickpea Salad.
Extra-virgin olive oil
If possible, try to use a good quality Extra Virgin Olive Oil for the Ultimate result.
Lemon juice
To make the BEST Dressing for Chickpea salad, using Fresh Lemon Juice, is a MUST. Using Store-bought/Bottled lemon juice will ruin the taste of this salad.
Salt and pepper
Season to taste.
Tajin
This is optional, but I use just 1/8 Teaspoon of Tajin in most of my lemony salad dressings.
How to Make Chickpea Salad
First, make sure to drain and rinse the chickpeas to remove liquid and excess salt. In the meantime, chop your veggies into bite-size piece.
In a large Bowl, toss together chickpeas, cucumber, Cherry Tomatoes, Radishes, Scallions, Arugula and Parsley.
In a small bowl whisk together the dressing ingredients; extra virgin olive oil, lemon juice, pinch of sea salt, ground black pepper and tajin.
Pour the lemony dressing over the chickpea salad. Toss to evenly coat, season with more salt and pepper if needed.
Lastly, garnish your chickpea salad with some sesame seeds.
Keep it stored in the refrigerator and serve within an hour for best results.
You can store this chickpea salad in an airtight container for up to 3 days.

- 1 Can Can Chickpea Drained and Rinsed
- 2 Cups Cucumber Chopped into thin slices
- 2 Cups Cherry Tomatoes Cut in halves
- 1/2 Cup Radishes Chopped into thin slices

- 1 Cup Arugula
- 1/2 Cup Fresh Parsley Chopped
- 2 tbsp Sesame Seeds
- 1/4 Cup Extra Virgin Olive Oil
- 1 Fresh Lemon Juice it
- 1/8 tsp Sea Salt
- 1/8 tsp Ground Black Pepper
- 1/8 tsp Tajin Optional
